Cranberry Lemon Vinegar
The cranberries turn the vinegar pretty pink, the lemon adds a light note. Use with fruit salad, spring greens.
4 sprigs thyme
1 cup fresh cranberries
Peel of 1 lemon, cut in a spiral
2-3 cups rice wine vinegar
Place cranberries, thyme, lemon in a quart jar, add vinegar. Cover tightly, keep in a dark place for 2-3 weeks, shaking occasionally. Strain, rebottle. For gift giving, add a rafia tie.
